Quick Turkey Burger Summer Salad

Ah, summer in England—a time for flip flops, shorts, BBQs, and embracing the beauty of beer gardens! As the sun graces us with its presence, there’s nothing quite like the feeling of a refreshing salad to complement those warm, glorious days. And what better way to satisfy your cravings than with a turkey burger inspired salad that checks all the boxes of taste, nutrition, and summertime bliss?

It’s the ultimate harmony of smoky, grilled goodness with the crunch of fresh produce, perfectly suited for those sunny afternoons and al fresco dining moments.

This recipe is perfect for utilising leftover BBQ meat & sides, cut it up whatever you have and throw it in. However, if you’re starting from scratch, don’t worry! We’ve included a mini turkey burger recipe below. Everyone has their own favourite burger toppings, so feel free to get creative and add whatever you enjoy. In my salad, I used tomato, cucumbers, pickles, and onion, but the possibilities are endless!

Speaking of using up leftovers, I keep cut up sourdough ends in my freezer & throw them in the air fryer with a bit of seasoning (garlic salt is my current obsession), this is also a great way to use up slightly stale burger buns. Store bought croutons are also perfectly fine, just use what’s easiest for you.

The recipe already provides 40 grams of protein per serving, but you can increase it further by trying my homemade protein dressing or incorporating high-protein add-ins like grilled chicken breast.

Quick Turkey Burger Summer Salad

This recipe is perfect for utilising leftover BBQ meat & sides, cut it up whatever you have and throw it in. Or follow the instructions to make some easy mini turkey burgers from scratch.

Ingredients
  

Mini Burgers

  • 250 grams 7% fat turkey thigh mince
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chilli flakes
  • 1 tsp mustard (or mustard powder)
  • salt & pepper to taste

Salad

  • 3 cups chopped lettuce (or a bag of any mixed salad leaves you like!)
  • 50 grams sweetcorn
  • 100 grams plum or cherry tomatoes
  • 1 medium diced carrot
  • 1 sliced spring onion or red onion

Salad Dressing

  • 40 grams Light Cheddar Cheese (I use Cathedral City Light)
  • 60 grams Diced Sourdough (Or any leftover bread, or just use croutons)
  • 30 ml Honey Mustard Salad Dressing*

Instructions
 

  • Preheat a large pan to high. Mix your spices together in a large bowl. Add the turkey mince & using your hands fully mix the spices into the mince.
  • Split the mix into roughly 8 equally sized pieces. Roll these into balls & put into your hot pan, push down with your fingers to flatten into your mini burger shape.

  • Cook for 3-4 minutes on each side until nicely browned & cooked through.

  • Put your diced bread in the air frier or oven on high (5 minutes from frozen, 2-3 minutes from fresh) to crisp up. For some extra flavour why not add some garlic salt (or your favourite spices) to the bread, sprinkle a bit of water on the bread first so the spices stick then cook as usual.
  • Split your salad between two bowls, layer your veggies on top then drizzle on the dressing.

  • Sprinkle the cheese across the salad, then add the mini burgers & sourdough on top.

Notes

The Dressing: I used Tescos Honey Mustard Salad Dressing, but you can use your favourite dressing, if you check the bottle you want this to be around 220cals per 100ml/33cals per 15ml serving (1 tbsp) to keep the same calories. 
Up the protein: Adding grilled/air fried turkey (or chicken) breast really ups the protein of any meal & goes great with this
Up the protein: Switch the dressing for my high protein salad dressing & add 10 extra grams of protein for just 24 more calories.
